Bread (white) plays a major part in so many peoples' lives that they find it difficult to give up, even though they know it is unhealthy. Fortunately, there are healthier alternatives to white bread that is tasty, delicious and simple to make. Spelt is considered an ancient grain, which means it has not been affected by genetic modification, crossbreeding, hybridization, etc. Spelt can be substituted for wheat flour to make bread, pastries, pasta, etc. The following is our favorite spelt bread recipe.
500g Organic White Spelt Flour
2 tsp Bicarbonate of Soda
1 tbsp honey
200ml natural yogurt
1 tsp Himalayan Pink salt
300ml tepid water
1 tbsp coconut oil
Put the flour, baking soda, honey, yogurt and salt into a large bowl and blend them together.
Stir in the water, and when everything looks craggy and lumpy, stir in the oil. Using your hands gather everything together into a doughy mass.
Knead dough in the bowl for 100 presses, in the bowl or on a work surface.
Shape the dough and put it into your prepared tin.
Pre-heat the oven.
Bake the loaf for 40-45 minutes. You will know it’s done when the bottom sounds hollow when tapped. Leave to cool on a wire rack.
