Cucumber Mint Smoothie is refreshing and very low in Cholesterol. It is also a good source of Vitamin E (Alpha Tocopherol), Riboflavin, Vitamin B6, Phosphorus, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin K, Folate, Calcium, Iron, Magnesium and Manganese.

A refreshing start to your day.
  • 3 cups diced cucumber
  • ¼ cup raw almonds
  • ¼ cup (packed) chopped fresh mint leaves
  • 2 cups packed baby spinach
  • 1 tablespoon freshly squeezed lemon juice
  • 3 cups coconut water ice cubes
  • banana, raisins, honey or agave to taste (optional)
  1. Blend together all the ingredients, except the coconut ice, until smooth. Add the coconut ice and blend once more.
